This recipe is one of our family’s favorite staple meals. Not only is is quick and easy, but there is a ton of flavor from the herb crust and lemon!
Lemon-Herb Chicken

Ingredients
- 2-4 Boneless, skinless chicken breasts
- 1/2 tsp. + 1/4 tsp. Dried oregano
- 1/4 tsp. + 1/4 tsp. Dried parsley
- 1/4 tsp. Dried thyme
- Dash Onion powder
- Dash Garlic powder
- Salt & pepper to taste
- Juice of 1 Lemon
- Zest of 1/2 Lemon
Instructions
- Place the chicken in a bowl and sprinkle with 1/2 tsp. oregano, 1/4 tsp. parsley, thyme, onion powder, and garlic powder.
- Turn the chicken over and coat with 1/4 tsp. oregano and 1/4 tsp. parsley.
- Turn the chicken over {again, I know}, squeeze the lemon juice into the bowl and zest 1/2 of the lemon over top.
- Add salt & pepper to taste.
- Let the chicken sit at least 10 minutes in the lemon-herb marinade.
- Most of the time when making Lemon-Herb Chicken, we broil it, but sometimes {when we’re really crazy} we’ll grill it. So if you are going to broil, go ahead and set it on high while the chicken is marinating. If you’re going to grill it, send the husband outside to prep the grill. :-)
- Broil on high for 15 minutes, or until cooked through. *If grilling, save some lemon juice {that hasn’t touched raw poultry} to ‘baste’ the chicken with while cooking.
- If you have a handy-dandy steamer like we do, prepare the rice and broccoli and set it to steam while the chicken is cooking. Add a sprinkle of lemon pepper to the broccoli while it is steaming.
- Turn the steamer off as soon as it is done cooking. *I have found that in our steamer, the rice & broccoli take approximately 30 minutes to cook.
- To serve: scoop your rice onto the plate & add a pat of salted butter {cut into small pieces}. Serve broccoli on top and shake lemon pepper over both. Plate chicken on top of or next to the broccoli and rice.
