I found this low-carb sandwich recipe recently {on Pinterest} and I am so excited to share it with you. I have been on a quest to eat right, be healthy, and lose weight lately & this is one of those dishes that I know my family will be eating frequently! My two-year-old pulled a chair up while I was shredding the chicken and wouldn’t stop asking for bites…for him this is huge because he rarely eats dinner. The husband also loved this sandwich, so I’d say it’s kid and husband friendly – the perfect easy-to-make 4th of July main dish!
I have to thank Katie over at Dashing Dish for this recipe. She is amazing and I love her recipes – you should definitely check her site out. This recipe is super easy and about as healthy as BBQ can get I’d say!
Katie recommends using a BBQ sauce low in sugar with 30 calories or less per serving. I love to use what I have in the pantry {since I have a BBQ stockpile going on…} so I chose this Stubb’s Original BBQ Sauce; it has 4 g of sugar and 30 calories per serving – perfect! I must warn you though…both myself and the husband thought the sandwich was a little on the spicy side. We loved it, but if you are sensitive to hot foods I would recommend a different BBQ sauce.
As soon as the chicken started to cook I wanted to dig in. Doesn’t that look delicious? Katie’s ingredient combination is so tasty!
I was a little hesitant to shred my own chicken. I thought it would take hours and be the biggest pain…but it wasn’t. It was super easy! And I would suggest you take Katie’s suggestion and use 2 forks, not a fork & knife {maybe that is common knowledge but I wanted to go against-the-grain and it didn’t work so well for me}.
Serve on a whole-wheat sandwich thin. {19 g whole grain, 5 g fiber, 100 calories, 2 g sugar, 22 g carbs}.
I just couldn’t wait to try this so I didn’t let my sauce reduce enough {as you can see in the picture below} but it was still yummy!
