The other day I decided to roast one of our pumpkins. I was in a “Fall” mood and wanted to cook everything in sight. So, with my Christmas Pandora station on, I cut open a pumpkin and roasted it {directions on that later this month}! There was no plan for this pumpkin, but as I was cleaning the pumpkin off, I thought of those delicious pumpkin muffins from Starbucks…you know the ones – with those yummy seeds on the top. This inspired me to to make some candied pumpkin seeds! We’ve had these sitting on the counter for a few days now, and I can’t stop eating them!!!
Here’s What You’ll Need:
Pumpkin Seeds
3 Tsbp. Granulated Sugar
1/2 tsp. Ground Cinnamon
1/8 tsp. Salt
If you’re getting your seeds from a pumpkin, start by slicing the top off. Then, cut the pumpkin in half and with a spoon, scoop the gross insides into a bowl. Pick out the seeds and wash them off. To quickly dry the seeds, put your oven on 120 degrees {or whatever is the lowest setting} and dry them on a cookie sheet for approximately 10 minutes. If you don’t want to harvest your own pumpkin seeds, you can purchase pepitas {shelled pumpkin seeds} on Amazon.
When the seeds dry, heat a saucepan over medium and cook the seeds until they brown and/or pop {approximately 5 minutes}. Add sugar , and stir 1 minute, or until the sugar begins to liquefy. Mix in cinnamon and salt. Spread the seeds on a baking sheet covered with cooking spray to cool. Once the seeds have cooled, break apart any that are stuck together.
I think these would be a wonderful gift – especially a hostess gift or guest favor at Thanksgiving! Just put them into a small mason jar and tie with a holiday-inspired ribbon. They’re a great alternative to candied nuts.
How yummy! I usually just toss ours with salt so this will be a fun twist!
