I am THRILLED to be sharing these cake bites with you today! They’ve been in my head for what feels like months now, and finally they’re out there. I hope you enjoy them; these are the perfect dessert for this holiday season.
Andes mints have always been a favorite of mine – one of the reasons I love going to Olive Garden! When I saw they were selling these baking chips at the grocery store, I knew I had to have them!
What You’ll Need:
1 Box Cake Mix
1 Can Chocolate Frosting
1-2 Bags Andes Creme de Menthe Baking Chips
Bake your cake according to the package directions, and let cool completely. I used a butter cake mix, but other flavors would work just as well I would imagine. You should stick to the traditional white, yellow, chocolate flavorings, though.
When your cake is fully cooled, break it into pieces {using your hands}, and put them in a large bowl. Mix the full can of frosting into your cake crumbs. I don’t remember the specific frosting I used, but it was a Hershey’s one with mini chips in it *mmm*. Make sure the frosting and crumbs are well-incorporated with no dry spots.
When your batter is done, you’ll need to melt the creme de menthe chips. I simply dumped the chips into a small bowl and microwaved until they were melted: 45 seconds at first, then 30 seconds until they were melted – of course I stirred in between each heating.
I’m sure there are different ways to go about this next part, but I formed a single bite then dipped it into the melted chocolate, and placed it on a baking sheet covered with wax paper. Generally you want to make the bites bite-sized {obviously} the size of a quarter is the approximate size. You should be able to make between 40 and 50 bites.
When all of your bites are coated in chocolate and placed on the wax-papered sheet, place them into the refrigerator for at least an hour {to allow the chocolate to harden}. Remove the bites from the refrigerator, and place them on a pretty plate to serve. If you save some of the baking chips, you can top the cake bites with them.
