My husband LOVES this meal. It’s been a staple in our diet since we got married. I know that no matter what, if I make these Easy Enchiladas for dinner I will have a happy man on my hands. Which is a win-win because they are more than easy to make!

Ingredients
- 100 Calorie Whole Wheat Tortillas
- Shredded Mexican Cheese
- Canned Black Beans
- Canned Whole Kernel Corn
- Rotel
- Enchilada Sauce
Instructions
- Preheat oven to 350 degrees.
- Drain {don’t rinse} the corn and beans and combine in a microwave-safe mixing bowl. Add the un-drained rotel and mix it all together. Season to your taste.
- Heat mixture in the microwave until warmed through.
- Top a tortilla with your corn mixture and sprinkle a little bit of shredded cheese on top. Roll and place in a 9×13″ baking pan. (To soften the tortillas so they roll better, dampen two paper towels and sandwich tortillas in-between them. Microwave for approximately 15 seconds.)
- When you’re finished assembling all of your enchiladas, coat them with a layer of enchilada sauce.
- Sprinkle with more cheese according to your tastes.
- Bake at 350 degrees for 15 minutes.
These enchiladas have so much flavor; and you can never go wrong with ooey-gooey cheese-topped food! Since we’ve been “healthy-ing” up our lifestyle, I love that these are a meat-less option. We try to get one “vegetarian” meal in per week.
