I’m absolutely loving my home y’all – the kitchen especially! My new kitchen is much more functional than the last one, which means I’ve been doing my best to cook more often. There’s still that part of me that hates meal planning though, so often times I end up having to dream something up last-minute for dinnertime! Lucky for you, my lack-of-planning turned out pretty great earlier this week. I came up with this yummy slow cooker enchilada chicken recipe.
