My family has been on an Asian food kick for awhile now. I don’t know what it is…but those flavors have just been grabbing me! {Maybe it helps that I’ve learned how to make yum yum sauce to go with all of our meals…}
One of my favorite food blogs is Poor Girl Eats Well. I am amazed at the tasty meals Kimberly can whip up for a really great price! Even we can afford to eat delicious, healthy meals every night when using her recipes. Boy does it give me hope that eating well doesn’t have to cost a fortune.
Kimberly’s recipe for Quinoa, Edamame & Sweet Pepper Lettuce Wraps were on our family menu last week. Honestly, I wasn’t sure how this would go over because it’s a vegetarian meal. {My husband is decidedly a meat & potatoes kind of guy}. However, I read somewhere that it’s a good idea to eat at least one vegetarian meal a week when trying to eat healthy and lose weight so this was a MUST make dinner. This recipe was a hit! Not only with the husband, but the little man too. It is definitely going on our “Food We Love” list!
My only possibly negative comment about these wraps is that the lettuce we chose ripped very easily, so we ended up using our forks most of the time. I thought that next time I might just rip up the lettuce and mix it with the filling in a bowl for an Edamame & Sweet Pepper Salad!

I made a few changes to Kimberly’s recipe so I could use what we had in our cabinets; but, the results were very similar. I swapped brown rice for the quinoa, vidalia onion in place of red onion, and used yum yum sauce on top.
What do you think of this as an easy-to-make, healthy dinner option?
