I can’t wait to share this oh-so-delicious snack with you! It is easily one of my favorite foods to munch on when I have a snack attack, and a must-have travel munchie. Some people have had an odd reaction when I’ve told them about how delicious these Pan-Fried Chick Peas are, but trust me just give them a shot and you will love them!
Ingredients:
1 can Garbanzo beans {aka chick peas}
Cooking spray
Cajun seasoning
1. Rinse and drain the chick peas in a colander. Initially, they will be very bubbly; just let the water run over them until the ‘suds’ have subsided.
2. Dump the rinsed chick peas onto a cookie sheet covered with paper towels. Pat with another paper towel to remove any excess water.
3. After drying, you might notice that the chick peas have these little translucent skins peeling off them. Remove them if you would like. I think it’s an almost therapeutic activity and I will spend half an hour removing them {at least}.
4. When you’re done, pull the paper towel out from under the chick peas and let them fall on the cookie sheet. Spread the chick peas out in a single layer on the sheet and thoroughly coat with cooking spray. Sprinkle some Cajun seasoning on top.
5. Bake the chick peas at 400 degrees for 30-35 minutes; until they are crispy on the outside and a little soft inside. Perfect and delicious! Try one {or two…} and add more seasoning to taste.
